Prefermentative stage: Destemmed and squeezed grape in prefermentative maceration with peels 24 hours at 10 ℃ and later extraction
Fermentation: In stainless steel tanks with autochthon yeast at less than 28 ℃ with daily pumping up, unballasting and post-fermentative soaking. Natural malolactic fermentation
Postfermentative stage: Daily pumps in stainless steel isotherm tanks at controlled temperature of 17 ℃ during 22 days. Tartar stabilisation at -3℃ during 10 days
TASTING NOTES
Colour: Crisp, bright, cherry colour, medium-high layer
Aroma: Very potent ripe fruit: raisin, dry plum, date, dry figs and slim chocolate
Flavour: Moderate sweet with well integrated acidity, pleasant tannins, honey reminder, black liquid chocolate and liquorice, round and persistent
Temperature to be served: 15℃
Pairings suggested: Very suitable as a starter with foie, blue cheese, pâtés and moruna pie. Also with desserts, piononos, pastries, cakes and crème brûlée

Anchuron is a winery located in the andalusian province of Granada. The vineyards are extended in the Sierra Nevada foothills, the natural preserve Sierra de Huétor and the natural preserve Sierra de Baza, at an average of 1000 metres above sealevel. The elaboration processes combine the Spanish tradition with the last technological advances and renewable energy resources.
