TECHNICAL SHEET
Varieties: 40% Cabernet Sauvignon, 30% Syrah, 30% Tempranillo.
Harvest: from 5 to 15 September 2010 with the entry of Fresh Grapes in the tank.
Fermentation: fermentation in stainless steel tanks with autoctonous Yeasts below 28?C, with daily overpumpings, delestage and pre-fermentative maceration. Natural malolactic fermentation.
Alcoholic strength : 15% Vol.
Wine ageing: 7 months in American and French oak barrel with a medium toasting and later ageing in bottles.
Protected designation of origin Quality Wine of Granada.
TASTING NOTES
Colour: red garnet color, almost dark, with violet-shaded rim, bright and crisp, medium-high intensity.
Smell: on the nose, toasted aroma, dairy, vanilled and aniseed, brown spices notes (cinnamon, clove) and floral notes from the ripe skin, complex.
Flavour: in mouth is tasty, spicy, rounded and with a mineral reminiscent. Sweet and pleasant tanning with hints of liquorice, sinks of oank. Long and persistent; beautiful balance between nose and mouth.
Recommended temperature to consume: 18?C.
Pairing food recommeded: Suitable for red meats, specially game meats. Iberian sausages, pâté and very cured cheeses. Appropiate for stews and traditional meats.
Anchuron is a winery located in the andalusian province of Granada. The vineyards are extended in the Sierra Nevada foothills, the natural preserve Sierra de Huétor and the natural preserve Sierra de Baza, at an average of 1000 metres above sealevel. The elaboration processes combine the Spanish tradition with the last technological advances and renewable energy resources.
