The Product:
Vineyards: chardonnay 60%, Garganega 30%, Trebbiano 10%.
Productive Techniques:Uses the Guyot system of vine cultivation with a wine production of 60/70 hl per hectare. The grapes for this Sparkling wine are very quickly harvested, put into crates and pressed immediately, thus ensuring the clarity of the resulting must. This must is then poured into steel vats, at a temperature of 16/18° C, for the first fermentation. After a few months, required for sedimentation, it is bottled with special Yeasts and sugar, to begin the second fermentation, a slow process of conservation at a temperature of 14°C - it is this process that gives the wine its effervescence or 'sparkle'. The bottles are stacked, laid down, side by side and every 6 months removed to keep the forming sediment in contact with the wine. For the Sparkling Wine - Classic Method, this operation takes 18 months. The bottles are then placed, with their neck downwards on 'pupitres' and experts reposition them daily to ensure that the sediment always sinks towards the corked end of the bottle. At the end of this operation, follows the dégorgment, where the neck of the bottle is immersed in a liquid that freezes at -20° and the cork is removed with the 'iced sediment'. The contents are then topped up to their original level, sugar added and the bottles corked, washed and after a few months are ready to be consumed.
Characteristics: Pale straw yellow colour, with greenish reflections, abundant soft bubbles, fine persistent perlage, yeasty bouquet, full flavour with an affable finish.
Alcoholic Content: 12,00% vol.
Combining: Best with desserts without cream.
Serve: At a temperature of 6/8° C in flutes.
